Kale Chips

Since my previous post, several people have asked me how to make kale chips. Since it's a super easy peasy recipe that I memorized after reading once, I've shared it with anyone who's asked, but never without strongly encouraging them to purchase Gwyneth Paltrow's new cookbook (which is where the recipe comes from), My Father's Daughter. The book has SO many other super yummy and healthy recipes that are simple enough for everyday meals, yet elegant enough for weekend dinner parties!
Kale chips have quickly become one of my favorite snacks because I love to munch on things that are crunchy and salty like potato chips (who doesn't?), but I often hate the way they make me feel. Kale chips are so tasty and totally quench my crunchy, salty snack craving yet are completely healthy!
Ingredients:
1 bunch of kale
2 tablespoons of olive oil
sea salt for seasoning
*Instead of sea salt, I sometimes sprinkle on a little salt-based seasoning such as Il Boschetto Salt Blends from Dean & DeLuca or just some nutritional yeast for added flavor.

Directions:
1. Preheat oven to 400 degrees.
2. Rinse the kale well. Lightly squeeze out any excess water, then pat dry with paper towels.
3. Discard the stems and tare the leaves into roughly 1&1/2-inch pieces.
4. Toss with olive oil and spread out onto two baking sheets.
5. Lightly sprinkle with salt (or seasoning of choice) and bake for 12-15 minutes or until lightly browned and crispy.
6. Eat (without the guilt) and enjoy!
